Obviously cutting out sugar and staying low carb is a pain. I feel like the only way I can stay on track is when I dedicate my Sunday’s to grocery shopping, meal prepping, and portioning out for the very busy week ahead. I’m sure I’m not alone in that!
Like always with my recipes, I’m not going to go into elaborate detail of why you should make these. I’m not going to tell you the tale of how my family and I used to live on a farm in the North Pole where magical tortillas grew from gluten free trees. Because even if that nonsense were true, nobody cares.
Nor am I going to jabber on for SEO purposes.
Just know that if you’re loving the low carb Mission tortillas like I am, you have to try these out!
What you’ll need…
- Low Carb Mission Tortillas
- Ground Turkey
- Taco Seasoning Pack of your choice
- Avocado Oil Spray
- Shredded cheese
- Avocado
- Sour Cream
- Salsa
What you’ll do…
- Start cooking your turkey
- Add seasoning packet
- Cut mission tortillas into 4ths
- Add (criss-crossing) two of the 4ths into muffin tin
- Spray with avocado oil so they crisp up!
- Fill with turkey & top with cheese!
- Pop into oven at 350 degrees for 15-20 mins.
- Top with sour cream, avocado, salsa, whatever you like! I really love Mateo’s Salsa lately so that’s what I’m sticking with!
- Enjoy!
*Side-note* Magnolia freaking loved these! They’re super kid friendly and I’m packing one in her lunch for tomorrow. She’s going to have quite the happy little surprise!
Microwave to re-heat or even better… use your air fryer!
