After thinking long and hard about a way to spice up our traditional chocolate chip cookie recipe we came up with a brilliant idea.
Candied Bacon!
Make your favorite chocolate chip cookie recipe and simply add some delicious candied bacon.
If bacon can go on donuts, why not in our cookies, too?
What you’ll need…
Bacon:
– 1lb of your favorite bacon. I usually use applewood.
– 2 teaspoons of chili powder
– 1 teaspoon of spicy dry mustard
-1/2 cup of brown sugar. I always use dark brown sugar, but either works!
– *Optional* finely chopped pecans
What you’ll do…
- First, prepare your cookie sheet by covering with aluminum foil and placing a wire rack on top. Coat the wire rack with non-stick spray.
- Combine all dry ingredients in a Ziploc bag.
- Toss bacon into the bag a few strips at a time and coat liberally!
- Spread bacon strips out on the rack and viola! At this point I sometimes press the extra coating onto the bacon strips that look like they need a little extra kick.
- Cook for 30 – 45 minutes.
- Once cooled, chop as fine or thick of chunks as you’d like and proceed to add to your favorite chocolate chip cookie recipe.
